Gut - Shaved Fennel Salad With Cheese And Herbs

(Serves 2)

3 fennel bulbs, trimmed and shaved or cut into very thin slices
1 large apple, sliced into very thin matchstick pieces 1 handful fresh dill or 2 tablespoons dried
Juice of one lemon
1⁄4 cup olive oil
4 large handfuls of mixed greens
1⁄4 cup miso
1⁄4 cup water
2 tablespoons nutritional yeast

In a bowl, mix the miso, water, dill and nutritional yeast together to make a “cheese”. Set aside.

In a large bowl, mix the shaved fennel and apple pieces together with the olive oil, lemon juice and mixed greens. When everything is coated, add the miso and dill cheese mixture and toss lightly until just coated and combined. Serve with additional greens to make a hearty salad.
