Vegan - Clean Cucumber Soup

So this recipe is a sort of cucumber raw soup that is VERY filling and can be a great snack, liquid dinner, or lunch accompaniment. Keep in mind I have no clue how to cook or prepare foods, so if I can do this, anyone can :-)


4 Organic cucumbers

2 cups filtered water

1 cup cashews (soaked overnight)

1 TBS coconut oil

5TBS raw apple cider vinegar

1tsp cumin

1TBS paprika

1tsp nutmeg

1tsp coriander

1TSP cayenne pepper

2-4 cloves garlic (I don't like much garlic, so I stick to 2)


Blend all ingredients in a Vitamix for a couple of minutes so it is thick and chunky. It's really important to let this sit in the fridge overnight so that the flavors develop.

Makes about 6 1 cup servings. Enjoy!!
