Gut - Clean Caesar Salad Dressing

1 cup raw cashews, soaked for 2-4 hours and drained
3 cloves garlic minced
Juice of 1 lemon
3 tablespoons wheat-free tamari
1⁄4 cup nutritional yeast
1 tablespoon chickpea or brown rice miso (gluten-free)
3 tablespoons extra virgin olive oil
1 tablespoon dijon mustard
Anchovy filets to taste (start with 3 and add more if you like a stronger flavor)
Sea salt and pepper to taste
Water to thin if necessary

Blend everything except water until creamy. Thin with water if needed. Store in a jar in the refrigerator.
