Gut - Braised Beef With Mushrooms Over Mashed Cauliflower

(Serves 4)

11⁄2 pounds grass fed stew beef or short ribs
2 tablespoons coconut oil, divided
2 tablespoons coconut flour
1 pound baby bella mushrooms, sliced
1 onion, diced
3 stalks celery, diced
3 cloves garlic, minced
1 tablespoon tomato paste
1⁄2 cup red wine
1⁄4 cup balsamic vinegar
2 rosemary sprigs
3 thyme sprigs
1 cup organic broth (beef or vegetable)
Sea salt and pepper to taste

Preheat the oven to 300 F. Toss beef with coconut flour, salt and pepper. Heat coconut oil in dutch oven over medium-high heat. Brown meat on all sides and remove from dutch oven and set aside. Add another tablespoon coconut oil to the dutch oven. Add onions, mushrooms and celery - sauté until translucent and starting to brown. Add tomato paste and sauté for 30 seconds. Add garlic, beef, wine, vinegar, rosemary, thyme and broth. Bring to a boil. Cover and place in oven. Cook for 3-4 hours or until beef is tender. Serve over mashed cauliflower.
