Gut - Clean Barbeque Sauce
(Makes 1.5 pints)
3 teaspoons olive oil
1 large onion, diced
2 garlic cloves, minced
24 ounces whole peeled tomatoes, pureed
2 teaspoons chipotle
1⁄4 cup apple cider vinegar
1⁄4 cup whole grain mustard
1⁄2 teaspoon green leaf stevia powder
1 teaspoon allspice
2 tablespoons freshly grated ginger
1⁄2 teaspoon sea salt or more to taste
Gently warm the olive oil in a medium sauce pot over medium heat, then add the onions. Sauté until translucent, about 5 minutes then add the garlic and sauté for another two minutes, until fragrant.
Add in the remaining ingredients and stir until combined. Reduce the heat to a low simmer and let it slowly cook down and thicken up, around 30 minutes. Remember to stir often to keep the bottom from burning. Once it’s nice and thick, taste and adjust seasonings. Store in the fridge for a few days, freeze, or use traditional water bath process.
