Gut - Chimichurri

(Makes 1 and 1⁄2 cups)

1 cup packed flat-leaf parsley, stems removed
1⁄4 cup fresh oregano leaves
3 garlic cloves, peeled and roughly chopped
1 small jalapeño pepper, seeds removed and chopped
2/3 cup olive oil
1⁄4 cup apple cider vinegar
1 teaspoon sea salt
1⁄2 teaspoon smoked paprika

Chop parsley, oregano, garlic and jalapeño (remove seeds). Mince them well by hand (with a very sharp knife) or add them to the bowl of a food processor and pulse until the ingredients are minced.

Transfer the garlic and herb mixture to a shallow bowl (your choice of shape and size) and mix in the olive oil, vinegar, salt, and smoked paprika. Adjust seasoning to taste.
